- 1 cup wild rice, rinsed
- 2 cups chicken broth
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1/2 cup chopped celery
- 1/2 cup chopped carrots
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- Combine wild rice and chicken broth in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 45-50 minutes, or until rice is tender and liquid is absorbed.
- While the rice cooks, heat olive oil in a skillet over medium heat. Add onion, garlic, celery, and carrots. Cook until vegetables are softened, about 5-7 minutes.
- Stir the cooked vegetables into the drained wild rice.
- Add fresh parsley, salt, and pepper. Stir to combine.
- Serve hot.
Notes
- For a richer flavor, you can use vegetable broth instead of chicken broth.
- Add toasted nuts like pecans or walnuts for extra crunch.
- Other vegetables like mushrooms or bell peppers can be added.
