Description

A simple recipe for light and airy whipped shortbread cookies.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 300°F (150°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Beat in the vanilla extract.
  4. In a separate bowl, whisk together the flour and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. The dough will be soft. You can either drop spoonfuls onto the prepared baking sheets or pipe them using a pastry bag with a star tip.
  7. Bake for 20-25 minutes, or until the edges are lightly golden.
  8. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For a different flavor, you can add 1/4 teaspoon of almond extract along with the vanilla.
  • Store cooled cookies in an airtight container at room temperature.
