- 1 tablespoon olive oil
- 1 pound ground venison
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (28 ounce) can diced tomatoes, undrained
- 1 (10 ounce) can diced tomatoes with green chilies, undrained
- 1 cup beef broth
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground venison and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
- Add chopped onion to the pot and cook until softened, about 5 minutes.
- Stir in minced garlic and cook for 1 minute more until fragrant.
- Add kidney beans, black beans, diced tomatoes, diced tomatoes with green chilies, and beef broth to the pot.
- Stir in chili powder, cumin, smoked paprika, and cayenne pepper (if using).
- Bring the chili to a simmer, then reduce heat to low, cover, and cook for at least 30 minutes, stirring occasionally. For deeper flavor, simmer for 1 hour or longer.
- Season with salt and black pepper to taste before serving.
Notes
- Serve hot with your favorite toppings such as shredded cheese, sour cream, or chopped cilantro.
- This chili can be made ahead of time and reheats well.
