Ingredients

- 4 cups fresh or frozen corn kernels
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups vegetable broth
- 2 cups milk
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh parsley, for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
- Stir in flour and cook for 1 minute.
- Gradually whisk in vegetable broth and milk until smooth.
- Add corn, salt, and pepper. Bring to a simmer, then reduce heat and cook for 15 minutes, stirring occasionally.
- Serve hot, garnished with fresh parsley.
Notes
- For a thicker chowder, use 3 cups of milk.
- Add cooked bacon or ham for a heartier soup.
- Adjust seasoning to your taste.
