Ingredients

  • 4 cups fresh or frozen corn kernels
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups vegetable broth
  • 2 cups milk
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  2. Stir in flour and cook for 1 minute.
  3. Gradually whisk in vegetable broth and milk until smooth.
  4. Add corn, salt, and pepper. Bring to a simmer, then reduce heat and cook for 15 minutes, stirring occasionally.
  5. Serve hot, garnished with fresh parsley.

Notes

  • For a thicker chowder, use 3 cups of milk.
  • Add cooked bacon or ham for a heartier soup.
