- 1 pound ground beef
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can diced tomatoes, undrained
- 1 (15 ounce) can tomato sauce
- 4 cups beef broth
- 1 cup cooked rice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional)
- 1 cup shredded cheddar cheese (for topping)
Instructions
- In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
- Pour in the diced tomatoes, tomato sauce, and beef broth.
- Add the cooked rice, salt, black pepper, dried oregano, and red pepper flakes (if using).
- Bring the soup to a boil, then reduce heat and simmer for at least 20 minutes, or longer for flavors to meld.
- Serve hot, topped with shredded cheddar cheese.
Notes
- For a vegetarian version, substitute ground beef with plant-based crumbles or extra vegetables like mushrooms and zucchini.
- You can use white or brown rice for this recipe.
