- 1 pound Brussels sprouts, trimmed and halved
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon garlic powder

- 1/4 teaspoon black pepper
- 1/2 cup dried cranberries
- 1/4 cup grated Parmesan cheese
- 2 tablespoons lemon juice
- 1 tablespoon Dijon mustard
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, toss the rinsed and drained chickpeas with 1 tablespoon of olive oil, chili powder, cumin, garlic powder, salt, and pepper. Spread them in a single layer on a baking sheet.

- Roast the chickpeas for 20-25 minutes, shaking the pan halfway through, until they are slightly crispy.
- Roast the Brussels sprouts for 15-20 minutes, until tender and slightly browned.
- In a large bowl, combine the roasted chickpeas and Brussels sprouts.
- Add the dried cranberries and Parmesan cheese to the bowl.
- In a small bowl, whisk together the lemon juice and Dijon mustard to make the dressing.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately.
Notes
- For extra crispy chickpeas, you can pat them very dry before tossing with oil and spices.
- If you prefer a milder spice, reduce the chili powder.
- You can add toasted nuts like walnuts or pecans for extra crunch.
