Spicy Black Bean and Corn Soup

Description

A hearty and flavorful soup with black beans, corn, and a touch of spice.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper (optional)
  • 4 cups vegetable broth
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup frozen or canned corn
  • 1/2 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic, chili powder, cumin, and cayenne pepper (if using). Cook for 1 minute more until fragrant.
  3. Pour in vegetable broth and bring to a simmer.
  4. Stir in black beans and corn. Return to a simmer and cook for 10 minutes, allowing flavors to meld.
  5. Stir in cilantro. Season with salt and pepper to taste.
  6. Serve hot.

Notes

  • For a creamier soup, you can blend a portion of the soup before adding the cilantro.
  • Garnish with sour cream, avocado, or tortilla chips if desired.
