Instructions

  1. In a medium bowl, whisk together the flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg, then stir in the molasses and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Cover the dough and chill for at least 1 hour.
  6. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  7. Place the powdered sugar in a shallow dish.
  8. Roll rounded tablespoons of dough into balls.
  9. Roll each ball generously in the powdered sugar, ensuring it is fully coated.
  10. Place the coated balls about 2 inches apart on the prepared baking sheets.
  11. Bake for 9-11 minutes, or until the edges are set and the centers are still slightly soft.
  12. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
