Description
A hearty and comforting soup made with smoked sausage, potatoes, and vegetables.
Ingredients

- 1 tablespoon olive oil
- 1 pound smoked sausage, sliced
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups chicken broth
- 2 pounds potatoes, peeled and cubed
- 1 cup milk
- 1/2 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add sausage and cook until browned.
- Add onion, carrots, and celery to the pot. Cook until softened, about 5 minutes.
- Pour in chicken broth and add potatoes. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
- Stir in milk and cheese until cheese is melted.
- Season with salt and pepper to taste.
Notes
- For a thicker soup, mash some of the potatoes against the side of the pot.
- Garnish with fresh parsley if desired.
