Easy and flavorful teriyaki chicken made in your slow cooker.

- 1.5 lbs boneless, skinless chicken thighs
- 1 cup teriyaki sauce
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon grated fresh ginger
- 2 cloves garlic, minced
- 1 tablespoon cornstarch
- 2 tablespoons water
- Cooked rice, for serving
- Sesame seeds, for garnish
- Chopped green onions, for garnish
Instructions
- Place chicken thighs in the slow cooker.
- In a bowl, whisk together teriyaki sauce, soy sauce, brown sugar, ginger, and garlic.
- Pour the sauce mixture over the chicken.
- Cover and cook on low for 4-6 hours or on high for 2-3 hours, until chicken is cooked through.
- Remove chicken from the slow cooker and shred it with two forks.
- In a small bowl, whisk together cornstarch and water to create a slurry.
- Stir the cornstarch slurry into the sauce remaining in the slow cooker.
- Turn the slow cooker to high (if it wasn’t already) and cook for another 10-15 minutes, stirring occasionally, until the sauce has thickened.
- Return the shredded chicken to the slow cooker and stir to coat with the thickened sauce.
- Serve the teriyaki chicken over cooked rice, garnished with sesame seeds and green onions.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the sauce.
- You can substitute chicken breasts for thighs, but adjust cooking time as needed.
