A quick and easy salad featuring tuna and white beans, perfect for a light meal.
Ingredients

- 1 (15-ounce) can cannellini beans, rinsed and drained
- 1 (5-ounce) can tuna in water, drained
- 1/4 cup chopped red onion
- 1/4 cup chopped celery
- 2 tablespoons chopped fresh parsley
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and black pepper to taste
Instructions
- In a medium bowl, combine the rinsed cannellini beans, drained tuna, chopped red onion, chopped celery, and chopped parsley.
- In a small bowl, whisk together the olive oil and lemon juice.
- Pour the dressing over the bean and tuna mixture.
- Season with salt and black pepper.
- Toss gently to combine.
- Serve immediately or chill for later.
Notes
- For a different flavor, you can add a pinch of dried oregano or a teaspoon of Dijon mustard to the dressing.
- This salad can be served on its own, over lettuce, or with crackers.
