Description

A straightforward and flavorful seafood soup recipe.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 8 cups seafood broth
  • 1 pound mixed seafood (shrimp, scallops, mussels), cleaned
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1/4 cup chopped fresh parsley

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook until softened, about 8-10 minutes.
  2. Add garlic and cook for 1 minute more until fragrant.
  3. Pour in seafood broth and add diced tomatoes, oregano, and thyme. Bring to a boil.
  4. Reduce heat and simmer for 15 minutes to allow flavors to meld.
  5. Add the mixed seafood to the pot. Cook until the seafood is opaque and cooked through, about 5-7 minutes depending on the type of seafood.
  6. Season with salt and pepper to taste.
  7. Stir in fresh parsley before serving.

Notes

  • For a spicier soup, add a pinch of red pepper flakes with the garlic.
  • You can use any combination of seafood you prefer.
