- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 8 cups seafood broth
- 1 pound mixed seafood (shrimp, scallops, mussels), cleaned
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- Salt and black pepper to taste
- 1/4 cup chopped fresh parsley
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook until softened, about 8-10 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Pour in seafood broth and add diced tomatoes, oregano, and thyme. Bring to a boil.
- Reduce heat and simmer for 15 minutes to allow flavors to meld.
- Add the mixed seafood to the pot. Cook until the seafood is opaque and cooked through, about 5-7 minutes depending on the type of seafood.
- Season with salt and pepper to taste.
- Stir in fresh parsley before serving.
Notes
- For a spicier soup, add a pinch of red pepper flakes with the garlic.
- You can use any combination of seafood you prefer.
- Serve hot with crusty bread.
