Pumpkin Biscuits

Description

Fluffy and flavorful biscuits with a hint of pumpkin spice.


Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1/4 cup cold unsalted butter, cut into small pieces
  • 3/4 cup cold buttermilk
  • 1/4 cup pumpkin puree
  • 1 tablespoon granulated sugar

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg, and cloves.
  3. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  4. In a separate small bowl, whisk together the buttermilk, pumpkin puree, sugar, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  6. Turn the dough out onto a lightly floured surface and gently pat it into a 3/4-inch thick rectangle.
  7. Fold the dough in half, then pat it down again to 3/4-inch thickness. Repeat this folding and patting process 2-3 more times.
  8. Cut out biscuits using a 2-inch round cutter. Place the biscuits on the prepared baking sheet.
  9. Bake for 12-15 minutes, or until golden brown.

Notes

  • For extra flavor, you can brush the tops of the biscuits with melted butter after they come out of the oven.
  • Serve warm with butter or your favorite jam.
