Description
A classic Latin American stewed chicken dish.
Ingredients

- 2 lbs chicken pieces
- 1 tbsp olive oil
- 1 large onion, chopped
- 2 bell peppers, chopped
- 4 cloves garlic, minced
- 1 (15 oz) can diced tomatoes
- 1 cup chicken broth
- 1 tsp cumin
- 1 tsp oregano
- Salt and pepper to taste
- 1/4 cup chopped cilantro
Instructions
- Season chicken pieces with salt and pepper.
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown chicken on all sides. Remove chicken and set aside.
- Add onion and bell peppers to the pot. Cook until softened, about 5-7 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Stir in diced tomatoes, chicken broth, cumin, and oregano. Bring to a simmer.
- Return chicken to the pot. Cover and reduce heat to low. Simmer for 30-40 minutes, or until chicken is cooked through and tender.
- Stir in cilantro before serving.
Notes
- Serve with rice and beans.
- For a spicier dish, add a pinch of red pepper flakes.
