Description

A classic Latin American stewed chicken dish.


Ingredients

  • 2 lbs chicken pieces
  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 2 bell peppers, chopped
  • 4 cloves garlic, minced
  • 1 (15 oz) can diced tomatoes
  • 1 cup chicken broth
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • 1/4 cup chopped cilantro

Instructions

  1. Season chicken pieces with salt and pepper.
  2. Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown chicken on all sides. Remove chicken and set aside.
  3. Add onion and bell peppers to the pot. Cook until softened, about 5-7 minutes.
  4. Add garlic and cook for 1 minute more until fragrant.
  5. Stir in diced tomatoes, chicken broth, cumin, and oregano. Bring to a simmer.
  6. Return chicken to the pot. Cover and reduce heat to low. Simmer for 30-40 minutes, or until chicken is cooked through and tender.
  7. Stir in cilantro before serving.

Notes

  • Serve with rice and beans.
  • For a spicier dish, add a pinch of red pepper flakes.
