Description

Rich chocolate brownies with a refreshing peppermint flavor, topped with a swirl of peppermint frosting.


Ingredients

  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder

  • 1/2 teaspoon salt
  • 1/2 teaspoon peppermint extract
  • 1/2 cup chocolate chips
  • For the Frosting:
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3 cups powdered sugar
  • 1/4 cup milk
  • 1 teaspoon peppermint extract
  • Red food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together the melted butter and granulated sugar.
  3. Beat in the eggs one at a time, then stir in the vanilla extract and peppermint extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Stir in the chocolate chips.
  7. Pour the batter into the prepared baking pan and spread evenly.
  8. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out with moist crumbs attached.
  9. Let the brownies cool completely in the pan.
  10. While the brownies cool, prepare the frosting. In a medium bowl, beat the softened butter until creamy.
  11. Gradually add the powdered sugar and milk, alternating between them, until the frosting is smooth and spreadable. Stir in the peppermint extract.
  12. If desired, add a few drops of red food coloring and swirl it into the frosting for a festive look.
  13. Spread the frosting evenly over the cooled brownies.
  14. Cut into squares and serve.

Notes

  • For a more intense peppermint flavor, add a few crushed candy canes on top of the frosting.
  • You can use dark chocolate chips for a richer chocolate taste.
