- 1/2 cup (1 stick) unsalted butter, softened
- 3 cups powdered sugar
- 1/4 cup milk
- 1 teaspoon peppermint extract
- Red food coloring (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, whisk together the melted butter and granulated sugar.
- Beat in the eggs one at a time, then stir in the vanilla extract and peppermint extract.
- In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Stir in the chocolate chips.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out with moist crumbs attached.
- Let the brownies cool completely in the pan.
- While the brownies cool, prepare the frosting. In a medium bowl, beat the softened butter until creamy.
- Gradually add the powdered sugar and milk, alternating between them, until the frosting is smooth and spreadable. Stir in the peppermint extract.
- If desired, add a few drops of red food coloring and swirl it into the frosting for a festive look.
- Spread the frosting evenly over the cooled brownies.
- Cut into squares and serve.
Notes
- For a more intense peppermint flavor, add a few crushed candy canes on top of the frosting.
- You can use dark chocolate chips for a richer chocolate taste.
- Ensure your butter is completely softened for the frosting to achieve a smooth consistency.
