One-Pot White Bean and Kale Soup

Description

A simple and hearty one-pot soup featuring white beans and kale.


Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 6 cups vegetable broth
  • 2 (15-ounce) cans cannellini beans, rinsed and drained
  • 1 bunch kale, stems removed and leaves chopped
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery. Cook until softened, about 8-10 minutes.
  2. Add garlic, thyme, and rosemary. Cook for 1 minute more until fragrant.
  3. Pour in vegetable broth and bring to a simmer.
  4. Stir in the rinsed cannellini beans.
  5. Add the chopped kale and cook until wilted, about 5-7 minutes.
  6. Season with salt and black pepper to taste.

Notes

  • For a creamier soup, you can mash some of the beans against the side of the pot before adding the kale.
  • Serve with crusty bread for a complete meal.
