Description
A simple and satisfying one-pot meal featuring ground beef, rice, and melted cheese.
Ingredients

- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can diced tomatoes, undrained
- 1 (10.5 ounce) can condensed cream of mushroom soup
- 1 cup water
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups uncooked white rice
- 1 cup shredded cheddar cheese
Instructions
- In a large skillet or pot, brown the ground beef with the chopped onion over medium-high heat. Drain off any excess grease.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Add the diced tomatoes, cream of mushroom soup, water, salt, and pepper. Bring to a simmer.
- Stir in the uncooked rice. Cover the skillet and reduce the heat to low.
- Simmer for 20-25 minutes, or until the rice is cooked and most of the liquid has been absorbed, stirring occasionally.
- Remove from heat and sprinkle the shredded cheddar cheese over the top. Cover for a few minutes until the cheese is melted.
- Serve hot.
Notes
- For a spicier dish, add a pinch of red pepper flakes with the salt and pepper.
- You can substitute ground turkey or chicken for the ground beef.
- Add a side salad for a complete meal.
