One-Pot Cheesy Beef and Rice Skillet

Description

A simple and satisfying one-pot meal featuring ground beef, rice, and melted cheese.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 cup water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups uncooked white rice
  • 1 cup shredded cheddar cheese

Instructions

  1. In a large skillet or pot, brown the ground beef with the chopped onion over medium-high heat. Drain off any excess grease.
  2. Stir in the minced garlic and cook for 1 minute until fragrant.
  3. Add the diced tomatoes, cream of mushroom soup, water, salt, and pepper. Bring to a simmer.
  4. Stir in the uncooked rice. Cover the skillet and reduce the heat to low.
  5. Simmer for 20-25 minutes, or until the rice is cooked and most of the liquid has been absorbed, stirring occasionally.
  6. Remove from heat and sprinkle the shredded cheddar cheese over the top. Cover for a few minutes until the cheese is melted.
  7. Serve hot.

Notes

  • For a spicier dish, add a pinch of red pepper flakes with the salt and pepper.
  • You can substitute ground turkey or chicken for the ground beef.
