- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 lb broccoli florets
- 1/4 cup soy sauce
- 3 tablespoons honey
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons olive oil
- Cooked rice, for serving
- Sesame seeds, for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, whisk together soy sauce, honey, sesame oil, minced garlic, grated ginger, and red pepper flakes (if using).
- In a large bowl, toss the chicken pieces with 1 tablespoon of olive oil and half of the honey soy mixture.
- Spread the chicken in a single layer on a large baking sheet.
- Roast for 15 minutes.
- While the chicken roasts, toss the broccoli florets with the remaining 1 tablespoon of olive oil and the rest of the honey soy mixture.
- Add the broccoli to the baking sheet with the chicken.
- Continue roasting for another 10-15 minutes, or until the chicken is cooked through and the broccoli is tender-crisp.
- Serve immediately over cooked rice, garnished with sesame seeds if desired.
Notes
- For crispier broccoli, you can broil for the last 1-2 minutes of cooking, watching carefully to prevent burning.
- Adjust the amount of honey and soy sauce to your preference.
- Feel free to add other vegetables like bell peppers or carrots.
