A simple and flavorful one-pan meal featuring tender chicken and crisp broccoli coated in a sweet and savory honey soy glaze.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 lb broccoli florets
  • 1/4 cup soy sauce
  • 3 tablespoons honey
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil
  • Cooked rice, for serving
  • Sesame seeds, for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together soy sauce, honey, sesame oil, minced garlic, grated ginger, and red pepper flakes (if using).
  3. In a large bowl, toss the chicken pieces with 1 tablespoon of olive oil and half of the honey soy mixture.
  4. Spread the chicken in a single layer on a large baking sheet.
  5. Roast for 15 minutes.
  6. While the chicken roasts, toss the broccoli florets with the remaining 1 tablespoon of olive oil and the rest of the honey soy mixture.
  7. Add the broccoli to the baking sheet with the chicken.
  8. Continue roasting for another 10-15 minutes, or until the chicken is cooked through and the broccoli is tender-crisp.
  9. Serve immediately over cooked rice, garnished with sesame seeds if desired.

Notes

  • For crispier broccoli, you can broil for the last 1-2 minutes of cooking, watching carefully to prevent burning.
  • Adjust the amount of honey and soy sauce to your preference.
  • Feel free to add other vegetables like bell peppers or carrots.
