One-Pan Honey Soy Chicken and Broccoli

Description

A simple and flavorful one-pan meal featuring chicken and broccoli coated in a sweet and savory honey soy sauce.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 lb broccoli florets
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil
  • Cooked rice, for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together soy sauce, honey, sesame oil, minced garlic, grated ginger, and red pepper flakes (if using).
  3. In a large bowl, toss the chicken pieces with 1 tablespoon of olive oil and half of the soy sauce mixture.
  4. Spread the chicken in a single layer on one side of a large baking sheet.
  5. In the same bowl, toss the broccoli florets with the remaining 1 tablespoon of olive oil and the rest of the soy sauce mixture.
  6. Arrange the broccoli on the other side of the baking sheet, next to the chicken.
  7. Bake for 20-25 minutes, or until the chicken is cooked through and the broccoli is tender-crisp.
  8. Serve the chicken and broccoli over cooked rice.

Notes

  • For crispier broccoli, you can broil for the last 2-3 minutes of cooking.
  • Adjust the amount of honey to your sweetness preference.
  • Add other vegetables like bell peppers or carrots for extra color and nutrients.
