- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 1 tablespoon vegetable shortening
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the vanilla extract.
- In a separate bowl, whisk together the flour and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Press the dough evenly into the prepared baking pan.
- Bake for 20-25 minutes, or until the edges are lightly golden.
- Let the shortbread cool completely in the pan.
- Once cooled, lift the shortbread out of the pan using the parchment paper. Cut into bars.
- Melt the chocolate chips and shortening in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth.
- Dip each shortbread bar halfway into the melted chocolate. Place on a clean sheet of parchment paper to set.
Notes
- For a festive touch, sprinkle the wet chocolate with colored sprinkles before it sets.
