Ingredients

  • 1 large onion, chopped
  • 2 bell peppers, chopped
  • 4 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 (10 ounce) can diced tomatoes with green chilies
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess fat.
  2. Add the chopped onion and bell peppers to the pot. Cook until softened, about 5-7 minutes.
  3. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Pour in the crushed tomatoes, tomato sauce, and diced tomatoes with green chilies.
  5. Add the chili powder, cumin, smoked paprika, and cayenne pepper (if using). Stir to combine.
  6. Season with salt and black pepper to your taste.
  7. Bring the chili to a simmer, then reduce the heat to low, cover, and cook for at least 30 minutes, stirring occasionally. For a richer flavor, you can simmer it for longer, up to 1-2 hours.
  8. Serve hot, with your favorite toppings.

Notes

  • For a spicier chili, add more cayenne pepper or a pinch of red pepper flakes.
  • You can substitute ground turkey or chicken for the ground beef.
