- 2 pounds ground beef
- 1 large onion, chopped
- 2 bell peppers, chopped
- 4 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 (15 ounce) can tomato sauce
- 1 (10 ounce) can diced tomatoes with green chilies
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (optional)
- Salt and black pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped cilantro
Instructions
- In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess fat.
- Add the chopped onion and bell peppers to the pot. Cook until softened, about 5-7 minutes.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
- Pour in the crushed tomatoes, tomato sauce, and diced tomatoes with green chilies.
- Add the chili powder, cumin, smoked paprika, and cayenne pepper (if using). Stir to combine.
- Season with salt and black pepper to your taste.
- Bring the chili to a simmer, then reduce the heat to low, cover, and cook for at least 30 minutes, stirring occasionally. For a richer flavor, you can simmer it for longer, up to 1-2 hours.
- Serve hot, with your favorite toppings.
Notes
- For a spicier chili, add more cayenne pepper or a pinch of red pepper flakes.
- You can substitute ground turkey or chicken for the ground beef.
- This chili freezes well. Let it cool completely before transferring to freezer-safe containers.
