Spicy Mexican Chicken Soup

Description

A flavorful and hearty chicken soup with a Mexican twist, featuring warm spices and fresh toppings.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper (optional)
  • 6 cups chicken broth
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup corn kernels (fresh or frozen)
  • Salt and black pepper to taste
  • For serving: shredded cheese, sour cream, chopped cilantro, avocado slices, lime wedges

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken from pot and set aside.
  2. Add onion to the pot and cook until softened, about 5 minutes. Add garlic, chili powder, cumin, and cayenne pepper (if using) and cook for 1 minute more until fragrant.
  3. Pour in chicken broth and diced tomatoes. Bring to a simmer, scraping up any browned bits from the bottom of the pot.
  4. Return chicken to the pot. Add black beans and corn.
  5. Reduce heat to low, cover, and simmer for at least 20 minutes, or until chicken is cooked through and flavors have melded.
  6. Season with salt and black pepper to taste.
  7. Ladle soup into bowls and serve with your favorite toppings.

Notes

  • For a spicier soup, add more cayenne pepper or a pinch of red pepper flakes.
  • You can use leftover cooked chicken or rotisserie chicken to save time.
  • This soup freezes well. Let it cool completely before transferring to freezer-safe containers.
