- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups all-purpose flour
- 1 cup semi-sweet chocolate chips
- 1 cup mini marshmallows
Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in the all-purpose flour until a dough forms.
- Fold in the semi-sweet chocolate chips.
- For each cookie, scoop about 2 tablespoons of dough and flatten it slightly in your palm. Place a few mini marshmallows in the center and carefully wrap the dough around them to form a ball.
- Place the cookie balls onto the prepared baking sheets, leaving about 2 inches between them.
- Bake for 10-12 minutes, or until the edges are set and the centers are still slightly soft.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For an extra hot cocoa flavor, you can dust the cooled cookies with a little powdered sugar.
- Ensure the marshmallows are fully enclosed in the dough to prevent them from burning.
