A low-carb version of traditional ramen, perfect for a keto diet.
Ingredients

- 1 tbsp sesame oil
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 4 cups chicken broth
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sriracha (optional)
- 2 servings shirataki noodles
- 4 oz cooked chicken or pork
- 1 soft-boiled egg
- 1/4 cup sliced green onions
- 1 tbsp nori strips
Instructions
- Heat sesame oil in a pot over medium heat.
- Add garlic and ginger, cook until fragrant, about 1 minute.
- Pour in chicken broth, soy sauce, and rice vinegar. Add sriracha if using.
- Bring to a simmer and cook for 5 minutes.
- Add shirataki noodles and protein. Cook for 2-3 minutes until heated through.
- Ladle into bowls. Top with a soft-boiled egg, green onions, and nori strips.
Notes
- For a vegetarian option, use vegetable broth and tofu.
- Adjust sriracha to your spice preference.
- You can add other keto-friendly toppings like mushrooms or spinach.
