Description

A low-carb version of traditional ramen, perfect for a keto diet.


Ingredients

  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 4 cups chicken broth
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sriracha (optional)
  • 2 servings shirataki noodles
  • 4 oz cooked chicken or pork
  • 1 soft-boiled egg
  • 1/4 cup sliced green onions
  • 1 tbsp nori strips

Instructions

  1. Heat sesame oil in a pot over medium heat.
  2. Add garlic and ginger, cook until fragrant, about 1 minute.
  3. Pour in chicken broth, soy sauce, and rice vinegar. Add sriracha if using.
  4. Bring to a simmer and cook for 5 minutes.
  5. Add shirataki noodles and protein. Cook for 2-3 minutes until heated through.
  6. Ladle into bowls. Top with a soft-boiled egg, green onions, and nori strips.

Notes

  • For a vegetarian option, use vegetable broth and tofu.
  • Adjust sriracha to your spice preference.
  • You can add other keto-friendly toppings like mushrooms or spinach.
