Description
A low-carb version of classic French onion soup.
Ingredients

- 2 tablespoons butter
- 2 large yellow onions, thinly sliced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 clove garlic, minced
- 6 cups beef broth
- 1/4 cup dry sherry or white wine (optional)
- 1 teaspoon Worcestershire sauce
- 4 slices Gruyere cheese
- 4 slices provolone cheese
- 1/2 cup grated Parmesan cheese
Instructions
- Melt butter in a large pot or Dutch oven over medium heat. Add onions, salt, and pepper. Cook, stirring occasionally, until onions are deeply caramelized, about 30-40 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Pour in beef broth, sherry (if using), and Worcestershire sauce. Bring to a simmer, then reduce heat and cook for 20 minutes.
- Preheat your broiler.
- Ladle soup into oven-safe bowls. Top each bowl with one slice each of Gruyere and provolone cheese, then sprinkle with Parmesan cheese.
- Place bowls on a baking sheet and broil until cheese is melted and bubbly, about 2-3 minutes.
Notes
- For a richer flavor, use a combination of beef and chicken broth.
- If you don’t have oven-safe bowls, you can melt the cheese on toasted bread slices and float them on top of the soup.
