Keto French Onion Soup

Description

A low-carb version of classic French onion soup.


Ingredients

  • 2 tablespoons butter
  • 2 large yellow onions, thinly sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 clove garlic, minced
  • 6 cups beef broth
  • 1/4 cup dry sherry or white wine (optional)
  • 1 teaspoon Worcestershire sauce
  • 4 slices Gruyere cheese
  • 4 slices provolone cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Melt butter in a large pot or Dutch oven over medium heat. Add onions, salt, and pepper. Cook, stirring occasionally, until onions are deeply caramelized, about 30-40 minutes.
  2. Add garlic and cook for 1 minute more until fragrant.
  3. Pour in beef broth, sherry (if using), and Worcestershire sauce. Bring to a simmer, then reduce heat and cook for 20 minutes.
  4. Preheat your broiler.
  5. Ladle soup into oven-safe bowls. Top each bowl with one slice each of Gruyere and provolone cheese, then sprinkle with Parmesan cheese.
  6. Place bowls on a baking sheet and broil until cheese is melted and bubbly, about 2-3 minutes.

Notes

  • For a richer flavor, use a combination of beef and chicken broth.
  • If you don’t have oven-safe bowls, you can melt the cheese on toasted bread slices and float them on top of the soup.
