- 1 tablespoon olive oil
- 1 pound Italian sausage, casings removed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 6 cups chicken broth
- 1/2 head of cabbage, shredded
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add sausage and cook, breaking it up with a spoon, until browned. Drain excess grease.
- Add onion and cook until softened, about 5 minutes.
- Stir in garlic and cook for 1 minute more until fragrant.
- Pour in chicken broth and bring to a simmer.
- Add shredded cabbage, thyme, salt, and pepper.
- Cover and simmer for 15-20 minutes, or until cabbage is tender.
- Taste and adjust seasoning if needed.
Notes
- For a spicier soup, use hot Italian sausage.
- You can add other low-carb vegetables like celery or bell peppers.
