Italian Wedding Soup

Description

A comforting and flavorful soup with tiny meatballs, greens, and pasta.


Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1/4 cup chopped fresh parsley
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 6 cups chicken broth
  • 1 cup acini di pepe pasta
  • 2 cups chopped spinach
  • 1/4 cup grated Parmesan cheese for serving

Instructions

  1. In a bowl, combine ground beef, breadcrumbs, 1/4 cup Parmesan cheese, egg, parsley, garlic, salt, and pepper. Mix well.
  2. Roll the mixture into small meatballs, about 1/2 inch in diameter.
  3. In a large pot, bring chicken broth to a boil.
  4. Add the meatballs to the boiling broth and cook for about 5 minutes, or until they float to the surface.
  5. Add the acini di pepe pasta and cook according to package directions.
  6. Stir in the chopped spinach and cook until wilted, about 2 minutes.
  7. Serve hot, garnished with 1/4 cup Parmesan cheese.

Notes

  • You can substitute ground turkey or chicken for the ground beef.
  • For a gluten-free version, use gluten-free breadcrumbs.
