  • 1/2 cup powdered sugar
  • 1/4 cup milk
  • 1/4 cup unsalted butter, softened

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract and molasses.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Stir in the rolled oats.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are lightly golden. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
  9. While the cookies cool, prepare the filling. In a medium bowl, beat together the softened butter and powdered sugar until smooth.
  10. Gradually add the milk, beating until the frosting is light and fluffy.
  11. Spread a generous amount of filling onto the bottom of one cookie and top with another cookie to create a sandwich. Repeat with remaining cookies.
