Description

A nourishing and flavorful vegetable soup packed with turmeric for immune support.


Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground ginger
  • 1/2 teaspoon cumin
  • 6 cups vegetable broth
  • 1 cup chopped sweet potato
  • 1 cup chopped cauliflower florets
  • 1 cup chopped broccoli florets
  • 1/2 cup cooked quinoa
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. Stir in garlic, turmeric, ginger, and cumin. Cook for 1 minute until fragrant.
  4. Pour in vegetable broth. Add sweet potato and cauliflower. Bring to a boil, then reduce heat and simmer for 15 minutes.
  5. Add broccoli and quinoa. Cook for another 5-7 minutes, or until broccoli is tender-crisp.
  6. Season with salt and pepper to taste.

Notes

  • For extra flavor, add a squeeze of lemon juice before serving.
  • Garnish with fresh parsley if desired.
