Description
A nourishing and flavorful vegetable soup packed with turmeric for immune support.
Ingredients

- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground turmeric
- 1 teaspoon ground ginger
- 1/2 teaspoon cumin
- 6 cups vegetable broth
- 1 cup chopped sweet potato
- 1 cup chopped cauliflower florets
- 1 cup chopped broccoli florets
- 1/2 cup cooked quinoa
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
- Stir in garlic, turmeric, ginger, and cumin. Cook for 1 minute until fragrant.
- Pour in vegetable broth. Add sweet potato and cauliflower. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add broccoli and quinoa. Cook for another 5-7 minutes, or until broccoli is tender-crisp.
- Season with salt and pepper to taste.
Notes
- For extra flavor, add a squeeze of lemon juice before serving.
- Garnish with fresh parsley if desired.
