Ingredients

- 1 cup couscous
- 1.5 cups boiling water or vegetable broth
- 1 tablespoon olive oil
- 1/4 cup chopped fresh parsley
- 2 tablespoons chopped fresh mint
- 1 tablespoon chopped fresh chives
- Salt to taste
- Black pepper to taste
Instructions
- Combine couscous and salt in a heatproof bowl.
- Pour boiling water or broth over the couscous. Stir once.
- Cover the bowl tightly with a lid or plastic wrap and let stand for 5 minutes.
- Fluff the couscous with a fork.
- Stir in olive oil, parsley, mint, and chives.
- Season with black pepper and adjust salt if needed.
- Serve warm.

- For a richer flavor, use vegetable broth instead of water.
- Feel free to add other herbs like dill or cilantro.
