Description

Ingredients

  • 1 cup couscous
  • 1.5 cups boiling water or vegetable broth
  • 1 tablespoon olive oil
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons chopped fresh mint
  • 1 tablespoon chopped fresh chives
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Combine couscous and salt in a heatproof bowl.
  2. Pour boiling water or broth over the couscous. Stir once.
  3. Cover the bowl tightly with a lid or plastic wrap and let stand for 5 minutes.
  4. Fluff the couscous with a fork.
  5. Stir in olive oil, parsley, mint, and chives.
  6. Season with black pepper and adjust salt if needed.
  7. Serve warm.
