- 2 large potatoes, cut into fries
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can kidney beans, drained and rinsed
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (8 ounce) can tomato sauce
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional)
- 2 cups shredded cheddar cheese
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the potato fries with olive oil, salt, and pepper on a baking sheet.
- Bake for 20-25 minutes, or until golden brown and crispy, flipping halfway through.
- While the fries bake, cook the ground beef in a large skillet over medium heat until browned. Drain off any excess grease.
- Add the chopped onion to the skillet and cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
- Add the kidney beans, diced tomatoes, tomato sauce, chili powder, cumin, paprika, and cayenne pepper (if using).
- Bring the chili to a simmer, then reduce heat and cook for at least 15 minutes, stirring occasionally.
- Once the fries are done, remove them from the oven.
- Top the fries with the chili, then sprinkle generously with shredded cheddar cheese.
- Return the fries to the oven for 2-3 minutes, or until the cheese is melted and bubbly.
Notes
- For extra flavor, add a pinch of smoked paprika to the chili.
- You can use your favorite type of beans in the chili.
- Serve immediately for the best texture.
