Hearty Chili Cheese Fries

Description

A classic comfort food dish featuring crispy fries topped with savory chili and melted cheese.


Ingredients

  • 2 large potatoes, cut into fries
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can kidney beans, drained and rinsed
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (8 ounce) can tomato sauce
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the potato fries with olive oil, salt, and pepper on a baking sheet.
  3. Bake for 20-25 minutes, or until golden brown and crispy, flipping halfway through.
  4. While the fries bake, cook the ground beef in a large skillet over medium heat until browned. Drain off any excess grease.
  5. Add the chopped onion to the skillet and cook until softened, about 5 minutes.
  6. Stir in the minced garlic and cook for 1 minute more until fragrant.
  7. Add the kidney beans, diced tomatoes, tomato sauce, chili powder, cumin, paprika, and cayenne pepper (if using).
  8. Bring the chili to a simmer, then reduce heat and cook for at least 15 minutes, stirring occasionally.
  9. Once the fries are done, remove them from the oven.
  10. Top the fries with the chili, then sprinkle generously with shredded cheddar cheese.
  11. Return the fries to the oven for 2-3 minutes, or until the cheese is melted and bubbly.

Notes

  • For extra flavor, add a pinch of smoked paprika to the chili.
  • You can use your favorite type of beans in the chili.
