- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 8 cups chicken broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- Salt and black pepper to taste
- 1 cup egg noodles
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
- Add chopped onion, carrots, and celery to the pot. Cook until vegetables begin to soften, about 5-7 minutes.
- Stir in minced garlic and cook for 1 minute more until fragrant.
- Pour in chicken broth and diced tomatoes. Add thyme and rosemary. Season with salt and pepper.
- Bring the soup to a boil, then reduce heat and simmer for 20 minutes, or until vegetables are tender.
- Add egg noodles and cook according to package directions, usually 8-10 minutes, until tender.
- Taste and adjust seasoning if needed. Serve hot.
Notes
- For a thicker soup, you can add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) in the last 5 minutes of cooking.
- Feel free to add other vegetables like peas, corn, or green beans.
