Description

A straightforward and comforting ground turkey soup recipe.


Ingredients

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and black pepper to taste
  • 1 cup egg noodles

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
  2. Add chopped onion, carrots, and celery to the pot. Cook until vegetables begin to soften, about 5-7 minutes.
  3. Stir in minced garlic and cook for 1 minute more until fragrant.
  4. Pour in chicken broth and diced tomatoes. Add thyme and rosemary. Season with salt and pepper.
  5. Bring the soup to a boil, then reduce heat and simmer for 20 minutes, or until vegetables are tender.
  6. Add egg noodles and cook according to package directions, usually 8-10 minutes, until tender.
  7. Taste and adjust seasoning if needed. Serve hot.

Notes

  • For a thicker soup, you can add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) in the last 5 minutes of cooking.
  • Feel free to add other vegetables like peas, corn, or green beans.
