- 1/2 small seedless watermelon, cut into 1-inch thick wedges
- 2 tablespoons olive oil, divided
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 ounces feta cheese, crumbled
- 1/4 cup fresh mint leaves, chopped
- 2 tablespoons balsamic glaze
Instructions
- Preheat your grill to medium-high heat.
- Brush watermelon wedges with 1 tablespoon of olive oil and season with salt and pepper.
- Grill watermelon for 2-3 minutes per side, until grill marks appear and watermelon is slightly softened. Remove from grill and let cool slightly.
- Cut grilled watermelon into bite-sized cubes.
- In a large bowl, combine watermelon cubes, crumbled feta cheese, and chopped mint.
- Drizzle with the remaining 1 tablespoon of olive oil and balsamic glaze.
- Gently toss to combine. Serve immediately.
Notes
- For a spicier kick, add a pinch of red pepper flakes.
- You can substitute goat cheese for feta if preferred.
