Ingredients

  • 1/2 small seedless watermelon, cut into 1-inch thick wedges
  • 2 tablespoons olive oil, divided
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces feta cheese, crumbled
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons balsamic glaze

Instructions

  1. Preheat your grill to medium-high heat.
  2. Brush watermelon wedges with 1 tablespoon of olive oil and season with salt and pepper.
  3. Grill watermelon for 2-3 minutes per side, until grill marks appear and watermelon is slightly softened. Remove from grill and let cool slightly.
  4. Cut grilled watermelon into bite-sized cubes.
  5. In a large bowl, combine watermelon cubes, crumbled feta cheese, and chopped mint.
  6. Drizzle with the remaining 1 tablespoon of olive oil and balsamic glaze.
  7. Gently toss to combine. Serve immediately.
