Description

Nutritious pancakes made with green smoothie ingredients and oats.


Ingredients

  • 1 cup rolled oats
  • 1 cup milk (dairy or non-dairy)
  • 1/2 cup spinach
  • 1/4 cup plain yogurt
  • 1 large egg
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Combine rolled oats and milk in a bowl. Let sit for 5 minutes.
  2. Add spinach, yogurt, egg, honey or maple syrup, baking powder, vanilla extract, and salt to the bowl.
  3. Blend the mixture until smooth using an immersion blender or a regular blender.
  4. Heat a lightly oiled griddle or frying pan over medium heat.
  5. Pour about 1/4 cup of batter onto the griddle for each pancake.
  6. Cook for 2-3 minutes per side, until golden brown and cooked through.
  7. Serve immediately.
