A healthy and delicious pancake recipe that combines the goodness of green smoothies and oatmeal.
Ingredients

- 1 cup rolled oats
- 1 cup milk (dairy or non-dairy)
- 1/2 cup spinach
- 1/4 cup plain yogurt
- 1 egg
- 1 tablespoon honey or maple syrup
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions
- Combine oats and milk in a blender. Let sit for 5 minutes.
- Add spinach, yogurt, egg, honey, baking powder, vanilla extract, and salt to the blender.
- Blend until smooth.
- Heat a lightly oiled griddle or frying pan over medium heat.
- Pour about 1/4 cup of batter onto the griddle for each pancake.
- Cook for 2-3 minutes per side, or until golden brown and cooked through.
- Serve immediately.
Notes
- For a thinner batter, add a little more milk.
- For thicker pancakes, use less milk.
- Add your favorite toppings like fruit, nuts, or seeds.
