Description

Soft gingerbread cookies topped with a chocolate kiss.


Ingredients

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/4 cup molasses
  • 1 teaspoon vanilla extract
  • 1 (10.5 ounce) package Hershey’s Kisses, unwrapped

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg.
  3. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the egg, then stir in the molasses and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Roll the dough into 1-inch balls. Place the balls about 2 inches apart on the prepared baking sheets.
  7. Bake for 8-10 minutes, or until the edges are set but the centers are still slightly soft.
  8. Immediately after removing the cookies from the oven, gently press one chocolate kiss into the center of each cookie.
  9. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For a smoother surface on your cookies, you can chill the dough for 30 minutes before rolling it into balls.
  • If the chocolate kisses become too soft to handle, you can place the baking sheet with the cookies and kisses in the refrigerator for a few minutes to firm them up.
