Gingerbread Cookie Bars

Description

Chewy and spiced gingerbread bars perfect for the holidays.


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup unsulfured molasses
  • 1 teaspoon vanilla extract
  • 3 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/4 cup milk
  • 1 cup powdered sugar
  • 2 tablespoons unsulfured molasses
  • 1 teaspoon vanilla extract
  • 1/4 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the molasses and vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  6. Spread the batter evenly into the prepared baking pan.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely in the pan.
  8. While the bars cool, prepare the glaze. In a medium bowl, whisk together the powdered sugar, molasses, and vanilla extract. Gradually add milk until you reach your desired drizzling consistency.
  9. Once the bars are completely cool, drizzle the glaze over the top. Let the glaze set before cutting into bars.

Notes

  • For a stronger gingerbread flavor, you can add an extra 1/2 teaspoon of ginger and cinnamon to the dry ingredients.
  • Store cooled bars in an airtight container at room temperature for up to 3 days.
