Garlic Parmesan Cauliflower Soup

Description

A creamy and flavorful soup made with cauliflower, garlic, and Parmesan cheese.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 head cauliflower, cut into florets
  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and cook for 1 minute more until fragrant.
  3. Add cauliflower florets and vegetable broth. Bring to a boil, then reduce heat and simmer until cauliflower is tender, about 15-20 minutes.
  4. Carefully transfer the soup to a blender (or use an immersion blender) and blend until smooth.
  5. Return the soup to the pot. Stir in heavy cream and Parmesan cheese. Heat gently until warmed through, do not boil.
  6. Season with salt and black pepper to taste.

Notes

  • For a thinner soup, add more vegetable broth.
  • Garnish with extra Parmesan cheese or fresh parsley.
