Description

Soft and chewy sugar cookies flavored with eggnog and topped with a simple eggnog glaze.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup eggnog
  • 3 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • For the Glaze:
  • 2 cups powdered sugar
  • 1/4 cup eggnog
  • 1/2 teaspoon vanilla extract

Instructions

  1. Cream together the softened butter and granulated sugar until light and fluffy.
  2. Beat in the eggs one at a time, then stir in the vanilla extract and eggnog.
  3. In a separate bowl, whisk together the flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Cover the dough and chill for at least 1 hour.
  6. Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
  7. Roll the chilled dough into 1-inch balls and place them 2 inches apart on the prepared baking sheets.
  8. Bake for 8-10 minutes, or until the edges are lightly golden.
  9. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  10. To make the glaze, whisk together the powdered sugar, eggnog, and vanilla extract until smooth.
  11. Dip the cooled cookies into the glaze or drizzle it over them. Let the glaze set before serving.

Notes

  • You can add a pinch of nutmeg to the cookie dough for extra spice.
  • For a thicker glaze, use less eggnog. For a thinner glaze, add a little more eggnog.
  • Store cookies in an airtight container at room temperature for up to 3 days.
