A creamy and tangy soup featuring the distinct flavor of dill pickles.
Ingredients

- 1 tablespoon butter
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups diced dill pickles
- 1 cup heavy cream
- 2 tablespoons chopped fresh dill
- Salt and black pepper to taste
Instructions
- Melt butter in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Pour in chicken broth and bring to a simmer.
- Stir in diced dill pickles and cook for 10 minutes.
- Reduce heat to low and stir in heavy cream and fresh dill. Heat through but do not boil.
- Season with salt and pepper to taste.
Notes
- For a thicker soup, you can blend a portion of the soup before adding the cream.
- Garnish with extra fresh dill or a dollop of sour cream.
