Dill Pickle Soup

Description

A creamy and tangy soup featuring the distinct flavor of dill pickles.


Ingredients

  • 1 tablespoon butter
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups diced dill pickles
  • 1 cup heavy cream
  • 2 tablespoons chopped fresh dill
  • Salt and black pepper to taste

Instructions

  1. Melt butter in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and cook for 1 minute more until fragrant.
  3. Pour in chicken broth and bring to a simmer.
  4. Stir in diced dill pickles and cook for 10 minutes.
  5. Reduce heat to low and stir in heavy cream and fresh dill. Heat through but do not boil.
  6. Season with salt and pepper to taste.

Notes

  • For a thicker soup, you can blend a portion of the soup before adding the cream.
  • Garnish with extra fresh dill or a dollop of sour cream.
