Description

A nourishing and cleansing green vegetable soup designed to support your body’s natural detoxification processes.


Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • 4 cups vegetable broth
  • 2 cups chopped kale
  • 2 cups chopped spinach
  • 1 cup chopped broccoli florets
  • 1 cup chopped zucchini
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Stir in garlic and ginger and cook for 1 minute more until fragrant.
  4. Add turmeric, cumin, and coriander and cook for 30 seconds, stirring constantly.
  5. Pour in vegetable broth and bring to a simmer.
  6. Add kale, spinach, broccoli, and zucchini.
  7. Cook until vegetables are tender, about 10-15 minutes.
  8. Season with salt and black pepper to taste.
  9. Serve hot.

Notes

  • For a smoother soup, you can blend it with an immersion blender before serving.
  • Add a squeeze of lemon juice before serving for extra brightness.
  • Feel free to add other green vegetables like celery or green beans.
