Ingredients

- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- 4 cups vegetable broth
- 2 cups chopped kale
- 2 cups chopped spinach
- 1 cup chopped broccoli florets
- 1 cup chopped zucchini
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Stir in garlic and ginger and cook for 1 minute more until fragrant.
- Add turmeric, cumin, and coriander and cook for 30 seconds, stirring constantly.
- Pour in vegetable broth and bring to a simmer.
- Add kale, spinach, broccoli, and zucchini.
- Cook until vegetables are tender, about 10-15 minutes.
- Season with salt and black pepper to taste.
- Serve hot.
Notes
- For a smoother soup, you can blend it with an immersion blender before serving.
- Add a squeeze of lemon juice before serving for extra brightness.
- Feel free to add other green vegetables like celery or green beans.
