Description

A light and nourishing soup packed with vegetables to support your body’s natural detoxification processes.


Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 pound cabbage, shredded
  • 1 pound carrots, sliced
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and ginger and cook for 1 minute more until fragrant.
  3. Stir in cabbage and carrots.
  4. Pour in vegetable broth and add thyme. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until vegetables are tender.
  5. Season with salt and pepper to taste.

Notes

  • For a smoother soup, you can blend a portion of it before serving.
  • Add a squeeze of lemon juice before serving for extra brightness.
