Description

A simple and comforting creamy tomato soup recipe.


Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • 1 teaspoon sugar
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and cook for 1 minute more until fragrant.
  3. Stir in crushed tomatoes, vegetable broth, and sugar. Bring to a simmer.
  4. Reduce heat and let simmer for 15 minutes, stirring occasionally.
  5. Remove from heat and stir in heavy cream.
  6. Season with salt and pepper to taste.
  7. Serve hot.

Notes

  • For a smoother soup, you can use an immersion blender or transfer the soup to a regular blender in batches.
