Ingredients

- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 pound mushrooms, sliced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- Melt butter and olive oil in a large pot over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Add mushrooms and cook until browned, about 8-10 minutes.
- Pour in broth and bring to a simmer.
- Reduce heat and let simmer for 15 minutes.
- Stir in heavy cream and parsley.
- Season with salt and pepper to taste.
- Heat through but do not boil.
Notes
- For a vegan option, use vegetable broth and a dairy-free cream alternative.
- Garnish with extra parsley or croutons.
