Ingredients

- 4 cups chopped celery
- 1 cup chopped onion
- 4 tablespoons butter
- 4 tablespoons all-purpose flour
- 4 cups chicken broth
- 2 cups milk
- Salt to taste
- Black pepper to taste
Instructions
- Melt butter in a large pot over medium heat.
- Add chopped celery and onion and cook until softened, about 5-7 minutes.
- Stir in flour and cook for 1 minute, stirring constantly.
- Gradually whisk in chicken broth and milk until smooth.
- Bring to a simmer, then reduce heat and cook for 15-20 minutes, or until celery is tender.
- Season with salt and pepper to taste.
- For a smoother soup, you can blend it with an immersion blender or in a regular blender in batches.

- For a richer soup, use heavy cream instead of milk.
- Garnish with fresh parsley or croutons.
