Description

A simple and comforting cream of celery soup recipe.


Ingredients

  • 4 cups chopped celery
  • 1 cup chopped onion
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 4 cups chicken broth
  • 2 cups milk
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add chopped celery and onion and cook until softened, about 5-7 minutes.
  3. Stir in flour and cook for 1 minute, stirring constantly.
  4. Gradually whisk in chicken broth and milk until smooth.
  5. Bring to a simmer, then reduce heat and cook for 15-20 minutes, or until celery is tender.
  6. Season with salt and pepper to taste.
  7. For a smoother soup, you can blend it with an immersion blender or in a regular blender in batches.

Notes

  • For a richer soup, use heavy cream instead of milk.
