Description
A light and airy take on classic cinnamon rolls, made with cloud bread.

- 4 large eggs, separated
- 1/4 cup cream cheese, softened
- 1/4 cup sweetener (erythritol or xylitol recommended)
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- Optional: 1 tablespoon melted butter for brushing
- Optional: Extra sweetener and cinnamon for topping
Instructions
- Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the egg yolks, softened cream cheese, sweetener, and vanilla extract until smooth.
- In a separate clean bowl, beat the egg whites with an electric mixer until stiff peaks form.
- Gently fold about one-third of the beaten egg whites into the yolk mixture to lighten it.
- Carefully fold in the remaining egg whites until just combined, being careful not to deflate the mixture.
- Spread the cloud bread batter thinly and evenly onto the prepared baking sheet.
- Sprinkle the cinnamon and nutmeg evenly over the batter.
- Bake for 20-25 minutes, or until the cloud bread is lightly golden and set.
- Let it cool slightly on the baking sheet.
- If desired, brush with melted butter and sprinkle with extra sweetener and cinnamon.
- Carefully roll up the cloud bread tightly, starting from one end.
- Slice the roll into individual cinnamon roll shapes.
Notes
- Ensure your egg whites are completely free of yolk for best results.
- Do not overmix the batter after adding the egg whites.
- These are best enjoyed fresh.
