  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups diced potatoes

  • 1/2 teaspoon dried thyme
  • 1/2 cup all-purpose flour
  • 1/2 cup butter
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh parsley

Instructions

  1. In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned. Drain off any excess grease.
  2. Add the chopped onion and minced garlic to the pot and cook until softened, about 5 minutes.
  3. Pour in the beef broth and add the diced potatoes, carrots, and celery. Season with salt, pepper, and thyme.
  4. Bring the soup to a boil, then reduce heat and simmer for 15-20 minutes, or until the vegetables are tender.
  5. While the soup simmers, melt the butter in a separate saucepan over medium heat. Whisk in the flour and cook for 1 minute, stirring constantly, to make a roux.
  6. Gradually whisk in the milk until smooth. Cook, stirring, until the mixture thickens.
  7. Pour the thickened milk mixture into the soup pot. Stir well to combine.
  8. Reduce heat to low and stir in the shredded cheddar cheese until melted and smooth.
  9. Stir in the sour cream until fully incorporated.
