Ingredients

- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 inch fresh ginger, grated
- 1 pound carrots, peeled and chopped
- 4 cups vegetable broth
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh lemon juice
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
- Add garlic and ginger and cook for 1 minute more until fragrant.
- Add carrots and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until carrots are tender.
- Carefully transfer the soup to a blender or use an immersion blender to puree until smooth.
- Return the soup to the pot. Stir in salt, pepper, and lemon juice. Heat through and serve.
Notes
- For a thinner soup, add more vegetable broth.
- Garnish with fresh parsley or cilantro if desired.
