A warming and invigorating soup packed with the goodness of carrots and ginger, perfect for a healthy meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 1 pound carrots, peeled and chopped
  • 4 cups vegetable broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh lemon juice

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and ginger and cook for 1 minute more until fragrant.
  3. Add carrots and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until carrots are tender.
  4. Carefully transfer the soup to a blender or use an immersion blender to puree until smooth.
  5. Return the soup to the pot. Stir in salt, pepper, and lemon juice. Heat through and serve.

Notes

  • For a thinner soup, add more vegetable broth.
  • Garnish with fresh parsley or cilantro if desired.
