Description

A hearty and flavorful beef stew, perfect for a comforting meal.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup beef broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 bay leaf

Instructions

  1. Season beef cubes with salt and pepper.
  2. Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown beef on all sides. Remove beef and set aside.
  3. Add chopped onion to the pot and cook until softened, about 5 minutes.
  4. Add minced garlic and cook for 1 minute more until fragrant.
  5. Stir in diced tomatoes, beef broth, chili powder, cumin, salt, pepper, and bay leaf.
  6. Return the browned beef to the pot.
  7. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 2 to 3 hours, or until beef is tender.
  8. Remove bay leaf before serving.

Notes

  • Serve hot with rice, tortillas, or mashed potatoes.
  • For a thicker stew, you can mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the simmering stew during the last 15 minutes of cooking.
