- 2 pounds beef chuck, cut into 1-inch cubes
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup beef broth
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 bay leaf
Instructions
- Season beef cubes with salt and pepper.
- Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown beef on all sides. Remove beef and set aside.
- Add chopped onion to the pot and cook until softened, about 5 minutes.
- Add minced garlic and cook for 1 minute more until fragrant.
- Stir in diced tomatoes, beef broth, chili powder, cumin, salt, pepper, and bay leaf.
- Return the browned beef to the pot.
- Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 2 to 3 hours, or until beef is tender.
- Remove bay leaf before serving.
Notes
- Serve hot with rice, tortillas, or mashed potatoes.
- For a thicker stew, you can mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the simmering stew during the last 15 minutes of cooking.
