- 2 medium zucchinis, sliced into 1/2-inch rounds
- 1/2 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 large egg, beaten
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a shallow dish, combine the Parmesan cheese, breadcrumbs, garlic powder, salt, and pepper.
- Dip each zucchini slice into the beaten egg, letting any excess drip off.
- Coat each egg-dipped zucchini slice in the Parmesan mixture, pressing gently to adhere.
- Place the coated zucchini slices in a single layer on the prepared baking sheet.
- Bake for 15-20 minutes, or until golden brown and tender.
Notes
- For extra crispiness, you can bake them for a few extra minutes.
- Serve immediately as a side dish or appetizer.
